I am happy to report that Jason’s knee surgery went well on Wednesday. The Doctor showed me pictures of the inside of his knee and it was…interesting. But they fixed him up and expect him to be feeling a lot better in about a week. He was under strict advisement to stay away from greasy food (not 100% sure why), so I thought a Vegetarian 3 Bean Chili would do the trick for dinner. This chili is full of flavor and very satisfying. A great dinner for a cold winter night. Speaking of winter, we just got our gas & electric bill and it was $215!!! WHAT? We have a one bedroom apartment!!!! Insane. Okay on to food…
1 green bell pepper, diced
1 red bell pepper, diced
1 medium onion, diced
1 14 oz can of black beans, pinto beans, and white northern beans (total 3 cans), drained & rinsed
1 24 oz can of whole peeled tomatoes, with juices
1 cup of vegetable stock
Olive oil spray
salt & pepper
1 teaspoon each of cumin & oregano
1/2 teaspoon each of smoked paprika, chili powder, garlic powder & cayenne pepper
1/2 teaspoon of salt
1/4 teaspoon of black pepper
1 cup of cooked rice (I used white jasmine rice)
Shredded pepper jack cheese
Spray bottom of a deep pot or dutch oven with olive oil. Saute peppers & onions until soft. Sprinkle with salt & pepper. Add beans, tomatoes, vegetable stock and seasoning. Stir to combine. Bring to a boil then reduce heat. Simmer for 20-25 minutes. Cook rice to package directions.
Serve chili over rice and top with shredded pepper jack cheese. You could also top with Greek yogurt or green onions. You can pretty much add whatever you want!
Delicious & healthy! This recipe makes a lot. You will have plenty of leftover if you’re only cooking for two. I already divided up the leftovers into little individual cups that I can eat for lunch. This would also be perfect for feeding a group of people or as a lighter Super bowl dinner.
