The Absolute Best Mashed Sweet Potatoes

Happy Saturday Everyone! I hope you’re enjoying your weekend. I’ve been pretty busy today making a couple more batches of cookies to replace the ones we lost. I also found time to pull together some delicious mashed sweet potatoes that I was asked to bring to a party tonight.

These sweet potatoes are great for holiday dinners, weeknight dinners and everything in between. Sweet potatoes are so good for you and I try to incorporate them into our weekly menus. Sometimes you have to be creative but this recipe is a no-brainer.

5 large organic sweet potatoes, peeled and quartered
1/3 cup of organic skim milk (from 100% grass-fed cows)
1/4 – 1/3 cup of organic brown sugar (based on your preference)
1/2 teaspoon of cinnamon
1/4 teaspoon of nutmeg
2 tablespoons of organic butter

Cover sweet potato quarters in water and boil until soft. Could take up to an hour if the pieces are large. It took mine about 30 minutes. Drain potatoes and return to pot. Mash potatoes until smooth. Add milk, brown sugar, cinnamon, nutmeg, and butter and mix together until well blended and creamy. Take a little taste and see if you need to add anything extra. You can really add more of any of the ingredients based on your preference.

Mashed Sweet Potatoes

These come together so quickly and they are quite tasty. The brown sugar brings out the natural sweetness of the potatoes and the butter and milk work together to make them oh so creamy.
